Scientists discover exact mechanism for how broccoli and crucifers fight cancers


Researchers fed a special cultivar of broccoli, a combination of wild and commercially available broccoli that contains high levels of glucoraphanin, to nineteen volunteers each week for three months. They compared the first group to two other groups eating the same diet, except one consumed commercially available broccoli and the third ate none of the crucifer. The team observed that those eating the glucoraphanin-rich vegetable showed signs of an improved metabolism.

The scientists determined that a compound commonly found in crucifers, known as sulforaphane, improved the chemical reactions inside mitochondria, the power source for our cellular machinery. The study found that glucoraphanin helped ‘retune’ metabolic processes in the cells that get disrupted as we age. Lead author, Dr. Richard Mithen commented, “We think this provides some evidence as to why people who eat diets rich in broccoli may keep in good health… mitochondria are really, really important, and when they start to go wrong it leads to many of the diseases of aging.”

The nutritionists performing the study recommend eating broccoli two to three times a week. Other health-promoting members of the cruciferous vegetable family include Brussels sprouts, kale and cauliflower. Dr. Mithen concluded “We think it is significant because it shows in humans a measurable effect on our metabolism, which is central to our overall health and could explain the diverse range of beneficial effects many observational dietary studies have shown previously.” It is important to note that while this study used a specially concentrated type of broccoli to produce the stated results, consumption of commercially available broccoli and crucifers have been shown to exhibit similar anti-cancer properties when eaten over a longer period of time

Although they may not be the ideal pre-date snack, the notoriously bad-for-breath alliums could be beneficial to teeth. Because they’re colorless, they won’t cause surface stains, says Messina, adding that after eating them you’re more likely to brush—which is a surefire way to get whiter teeth.


The loud crunch you hear when you bite into this hard fruit may be annoying, but it’s also good for your choppers. Apples’ crispiness strengthens gums, and their high water content increases saliva production, dispersing and neutralizing colonies of bacteria that lead to bad breath and plaque, says Smigel.


Baking soda

Take a toothpaste break and try brushing with this common ingredient. Baking soda is a base, like bleach, notes Messina, and the “soda”—which is actually a form of salt—in this pantry staple is a mild abrasive that works to scrub off plaque and surface stains.

The same high water content that makes these veggies great for your waistline and your health also helps them whiten your teeth by stimulating saliva production, which aids in washing away food debris and strengthening gums, according to Smigel.

Drink lots of water to keep your mouth hydrated and your smile bright, advises Smigel, who recommends sipping and swishing between glasses of wine and when eating dark, pigmented foods to prevent staining. Researchers said that most ways of cooking broccoli and other cruciferous vegetables, which are rich in cancer-fighting sulforaphane, decrease their ability to fight disease. They explain that the enzyme myrosinase in broccoli is needed for sulforaphane to form, and if myrosinase is destroyed, sulforaphane cannot form.

The latest study compared boiled, microwaved and steamed broccoli. Researchers found that steaming broccoli for up to five minutes was the best way to preserve its myrosinase. For example boiling and microwaving broccoli for one minute or less destroyed the majority of the enzyme.

However, people who eat well-cooked broccoli can still get sulforaphane by adding raw foods containing myrosinase to their meals, according to researchers.

Participants in the latest study were given broccoli supplements with no active myrosinase. However, some participants ate a second food with myrosinase.

Participants who consumed myrosinase had significantly higher levels of sulforaphane in their blood and urine than those who did not eat the second food.

“Mustard, radish, arugula, wasabi and other uncooked cruciferous vegetables such as coleslaw all contain myrosinase, and we’ve seen this can restore the formation of sulforaphane,” researcher Elizabeth Jeffery of University of Illinois at Urbana-Champaign said in a news release.

“As we’re learning, food processing isn’t just what happens to food before it reaches the grocery shelves,” AICR associate director of nutrition programs Alice Bender added, according to HealthDay. “This research highlights that what you do in your kitchen can make those fruits and vegetables on your plate even more cancer-protective.”

The findings were presented at the annual meeting of the American Institute for Cancer Research in Bethesda, Maryland.

Two breakfast cereals with the potential to reduce the risk of colon and bowel cancers, heart disease, diabetes, stroke and to help control weight were released by the CSIRO last month.

Dr Bruce Lee, director of the CSIRO’s Food Futures National Research Flagship, says that other super grains to be used in breads, biscuits and pasta can be released by 2012.

”You can take supplements or you can get people to eat a healthy diet, but often it is hard to get people to change their dietary habits. ”The beauty of these types of foods is that you can add the wholegrain into the food – you are not forcing consumers to change their diet to something else,” he says.
