Breakfast Wheat Berries

Wheat berries sweetened with honey and perfumed with rose water and spices make a delicious breakfast on their own or stirred into yogurt. Whether you use farro,  kamut, spelt or wheat berries (and whether you are cooking them for breakfast or for dinner) the trick here is to cook the grains for as long as it takes for them to really soften and to splay (that is, to burst at one end).

Total time: About 1 1/2 hours, mostly unsupervised simmering (plus overnight soaking)

  • 1 cup wheat berries
  • 5 cups water
  • Salt to taste
  • 1/4 cup honey, agave syrup or brown sugar, or more to taste
  • 1/2 to 1 teaspoon rose water, to taste
  • 1 teaspoon ground anise or fennel seeds
  • 3/4 teaspoon ground cinnamon
  • 1/8 teaspoon freshly grated nutmeg
  • 1/2 cup raisins or other chopped dried fruit of choice
  • 1/3 cup chopped walnuts, almonds, hazelnuts, or a mixture for garnish
  • 2 cups plain low-fat yogurt (optional)
  • Pomegranate seeds for garnish (optional)

1. The night before, combine wheat berries, 1 quart of the water and salt and bring to a boil in a saucepan. Reduce heat, cover and simmer 1 hour. Remove from heat, stir in the honey, agave syrup or sugar, rose water, anise or fennel seeds, cinnamon, nutmeg and raisins or dried fruit. Cover and leave overnight (or for 5 to 6
hours).

2. In the morning, add remaining cup of water to the wheat berries and bring to a simmer. Cook 30 to 45 minutes, stirring often, until berries are soft and splayed at one end. There should be some liquid surrounding the wheat berries (add more water if necessary). Taste and add more sweetener if desired.

3. Serve on their own with some of the liquid in the saucepan (stir in some milk if desired), or spoon about 1/3 cup yogurt into bowls and top with a generous spoonful of the berries, with some of the sweet broth. Top with a handful of chopped nuts and a few pomegranate seeds if desired.

Yield: Serves 4 to 6

Advance preparation: The cooked wheat berries will keep for 3 to 4 days in the refrigerator. The dried fruit will continue to swell and will lose flavor, but it will
be captured in the broth.

From sea bacteria to veterinary pain medications, scientists have been looking everywhere for a solution to antibiotic-resistant bacteria. But a new study finds that the solution may be right inside their kitchen cabinets. Honey, which has already shown some promise in treating wounds, may also be useful for fighting infections.

In a way, it makes sense. If honey can help treat wounds and prevent infection on the outside, then it could probably fight infections on the inside too. “The unique property of honey lies in its ability to fight infection on multiple levels, making it more difficult for bacteria to develop resistance,” said study leader Dr. Susan M. Meschwitz,. Her findings were presented recently at the National Meeting of the American Chemical Council.

Honey commits a multi-pronged attack on bacteria, as it uses hydrogen peroxide, acidity, osmotic effect, high sugar concentration, and polyphenols to kill bacterial cells. Together, these antibacterial properties make it difficult for the bacteria to adapt. Osmotic effect works particularly well due to honey’s high sugar concentration, which sucks water out of the bacterial cells, dehydrating them, and leading to death.

Honey also inhibits a bacterial cell’s ability to communicate with other bacterial cells, known as quorum sensing. This renders them unable to form communities, and therefore unable to attack in large numbers, where they would normally be stronger. Meanwhile, polyphenols, or antioxidants, such as caffeic acid, p-coumaric, and ellagic acid contain antimicrobial properties. “We have separated and identified the various antioxidant polyphenol compounds,” Meschwitz said in the release. “In our antibacterial studies, we have been testing honey’s activity against E. coli, Staphylococcus aureus, and Pseudomonas aeruginosa.”

Bacterial resistance, Meschwitz says, occurs when bacteria adapt to the antibiotics that are supposed to inhibit their growth processes. As their DNA adapts, they become immune to the antibiotic’s effect, and therefore become even more dangerous. It has been said that if we continue using antibiotics unsparingly, previously eradicated diseases will come back and wreak havoc. In an effort to reduce unnecessary antibiotic use, which occurs in doctor’s offices as well as industrial farms, both the health care community and the nation’s regulators have been taking action, and calling for reduced use.

Raw Oatmeal No-Bakes

One of my favorite ways to consume raw honey is in these easy raw oatmeal no-bakes! If my family has a craving for something sweet, these no-bakes are an easy, quick way to satisfy it. We make these often.

Ingredients:
2 cups Old-fashioned oats
1/2 cup Peanut Butter
1/4 cup Raw honey
1/4 cup Dark Chocolate chips
Mix all the ingredients and form into balls. We always test a little to see if a spoonful more of peanut butter or honey needs added.
You can also add flax seeds, coconut, sesame seeds, wheat germ, raisins, etc. Adjust the amount of other ingredients as needed.

External uses of honey

Raw honey has been used for centuries to heal burns, wounds and rashes.

One of my favorite remedies for burns comes from Dr. Christopher”s book Herbal Home Health Care.

The recipe:
1 part Comfrey
1 part Raw Honey
1 part Wheat Germ Oil

Mix all these ingredients together and store in glass jar with a lid. Keep in a cool, dark place, like a cabinet. You can also keep these ingredients on hand and mix them together quickly when needed.

When applying to burn, make sure to cover the burn with half-inch of the paste and cover with a bandage made for burns that will not stick, or cover with a soft leaf and wrap with gauze. Check the burn a few times a day and reapply more paste on top of the original paste to keep the thickness at half an inch. DO NOT REMOVE THE ORIGINAL PASTE until the burn is healed.

Dried grapes soaked in water and then in cold milk may be had on an empty stomach in order to counter asthmatic attacks. Consumption of grapes serves to strengthen lungs and flush the toxic contents of human body.
Dried figs also serve to flush out the phlegm content of the respiratory tract.
Equal measures of honey and olive oil may be added to warm milk. The consumption of the resulting milk along with a few cloves of garlic before breakfast acts as an antidote to asthmatic attacks.
Half a glass measure of boiled fenugreek juice along with tea spoons measure of ginger juice is also an excellent natural remedy. It serves to decongest and detoxify the lungs.
Regular consumption of fennel seeds also has a similar purpose to serve.
Herbal tea with ground ginger and a dash of lime juice is also effective. Patients susceptible to asthmatic attacks may choose the same over milk tea to be consumed twice a day. Herbal tea based on licorice root is extremely beneficial..
